EMILY TILSEN: MOM, HOME BAKER, ADOPTION ADVOCATE

Hello! I'm Emily, a home baker based in College Station, Texas, home of Texas A&M. While I'm not an official Texas Aggie, I do consider myself an Aggie fan and am about to be an Aggie mom! My oldest son is class of 2025 and this cake story starts with him. When he was born I decided to make his first birthday cake. I found a recipe and some chocolate rocks and made him an aquarium cake. I was hooked. 17 years later and I have made hundreds of cakes and cupcakes for family, then friends and now customers who have become a bit of both.

The transition to baking for customers came out of necessity. We were knee deep in an out of state kindred adoption and needed to raise funds so that I could travel to visit our daughter several times while we waited on paperwork so we could bring her to Texas. The first visit, when she was just born and still in the hospital I purchased a stuffed pink elephant for her and a small plastic bracelet with pink elephants for myself- to remember each other by as we entered a long season of waiting to be together. I started offering cupcakes weekly on our neighborhood facebook group and called my little fundraiser Pink Elephant, because elephants don't forget. Our neighbors were amazing and we were able to pay for several flights.  Once she did come home about ten months later I sat rocking her one night. She was wrapped in a soft pink blanket with an embroidered elephant on it and I realized that my little hobby had turned into something much bigger than cakes for family and one single fundraiser. Pink Elephant Confectionary, like my daughter, had been born in my heart and was home to stay.
